A couple of Saturdays ago, after a yoga class, I raided Trader Joe’s for ingredients for Bacon, Egg + Asparagus personal pizzas, courtesy of How Sweet It Is. I continue to await the arrival of local asparagus in stores, so I used spinach to top these babies.
Creative, simple, fun, and tasty describe this recipe. For some reason, I delighted in cracking an egg over pizza crust. While I originally felt uncertain about combining two breakfast ingredients into a meal traditionally eaten for lunch or dinner, I soon realized that topping a pizza with an egg makes perfect sense. We often eat pizza for breakfast, especially we college kids, so it was only a matter of time before we introduced traditional breakfast food to a traditional lunch/dinner food. And let us not overlook the bacon. The bacon/egg combo has always made sense. What kind of world would this be if we failed or refused to include them in a meal that millions of us enjoy at any time of day?
