Clafouti, Say What?

The recent drop in temperatures inspired me to concoct a warm, comforting dish. Yesterday, I consulted my Primal Blueprint Cookbook and came across an intriguing recipe for a Chicken Curry Clafouti. Say what now?

Apparently, a clafouti (klah-foo-tee) is a baked French dessert, usually made with cherries. The ingredients in this recipe call for a more savory final product than a sweet one.

While its airy structure renders the clafouti a light, easily digestible dish for any time of day, the protein in the eggs and chicken satiate hunger for hours. Plus, the curry adds a kick of flavor and awakens the senses.

Check out the recipe:

▪  6 eggs
▪  6 tablespoons melted butter cooled to room temp. + 1
pat for greasing pan
▪  3/4 cup cream, half & half or coconut milk
▪  4 cups cooked, chopped chicken
▪  2 tablespoons curry spice, or to taste
▪  Salt & Pepper to taste

Preheat oven to 400°F. Butter a 10” round or 13×9” baking dish. Whisk together eggs, butter & cream until
frothy. Mix in chicken and spices and pour into baking dish.
Bake about 45 minutes or until top is golden brown and puffy.

I highly recommend this recipe for anyone searching for a comforting, hearty dish completely devoid of processed sugars and carbs.
